Ingredients
- 3 cups rolled oats
- ¾ cup pumpkin seeds
- ½ cup sunflower seeds
- 1 Tbsp ground flaxseed
- ¼ cup sunflower butter
- ¼ cup coconut oil
- ⅓ cup pure maple syrup
- 2 tsp cinnamon
- 2 tsp vanilla extract
Directions
- Preheat oven to 350F. Line a rimmed baking sheet with parchment paper.
- In a large bowl, combine oats, sunflower seeds, pumpkin seeds, ground flaxseed and cinnamon.
- Add coconut oil, maple syrup, vanilla extract and sunflower butter to a small saucepan over low heat. Warm and stir until coconut oil is melted and ingredients are combined.
- Add wet mixture to oat mixture and stir to combine. Spread mixture in a single layer on the baking sheet.
- Bake for 20-25 minutes, until golden brown. Turn halfway through baking time.
- Allow it to cool and store in an airtight container for up to 2 weeks.
