With just 4.2 grams of sugar per serving, this granola is sure to be healthier than any you would find in a grocery store. Perfect for a grab and go snack or on top of yogurt or ice cream, this recipe is quick and easy.

Ingredients

  • 3 cups rolled oats
  • ¾ cup pumpkin seeds
  • ½ cup sunflower seeds
  • 1 Tbsp ground flaxseed
  • ¼ cup sunflower butter
  • ¼ cup coconut oil
  • ⅓ cup pure maple syrup
  • 2 tsp cinnamon
  • 2 tsp vanilla extract

Directions

  1. Preheat oven to 350F. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, combine oats, sunflower seeds, pumpkin seeds, ground flaxseed and cinnamon.
  3. Add coconut oil, maple syrup, vanilla extract and sunflower butter to a small saucepan over low heat. Warm and stir until coconut oil is melted and ingredients are combined.
  4. Add wet mixture to oat mixture and stir to combine. Spread mixture in a single layer on the baking sheet.
  5. Bake for 20-25 minutes, until golden brown. Turn halfway through baking time.
  6. Allow it to cool and store in an airtight container for up to 2 weeks.
Serve with yogurt or enjoy as is for a quick snack!
