Jan 14, 2022 Ultimate Pear Pomegranate Crisp

pearsThis fruit crisp will warm your soul and is a whole lot healthier than other versions, as the sugar and fat have been reduced while keeping the yummy flavor.  Have as dessert or have for breakfast with yogurt. 

Prep: 15 min  Baking time:  35-40 minutes

Ingredients

Filling: 

  • 6 Bartlett pears cored and cut into ¼ inch slices (keep on the peel) 
  • ½ c. Pomegranate seeds 
  • 1 Tbsp. maple syrup or agave or brown sugar 
  • 1 tsp. cinnamon 
  • 1 tsp. vanilla 
  • 1 tbsp. lemon juice 

Topping: 

  • 1/2c. rolled oats-old fashioned or quick oats 
  • 1/2c. flour (can use gluten free or whole wheat flour) 
  • 3 Tbsp. brown sugar or coconut sugar 
  • ¼ c. chopped walnuts 
  • ½ tsp. cinnamon 
  • ¼ tsp. salt 
  • 3 Tbsp. melted butter or margarine 

Directions

1. Preheat oven to 375
2. Combine fruit filling ingredients in large bowl, mix gently, then place in 9” cast iron skillet or baking pan.
3. In a medium bowl combine the DRY ingredients and mix well.  Drizzle with melted butter and mix with hands or pastry cutter until crumbly.
4. Distribute evenly over fruit filling and pat firmly in place.
5. Bake uncovered for 35-40 minutes or until top is browned and crisp and fruit is bubbling on the side.  Enjoy in good health!
