Recipe: Gluten Free Apple Muffins


2 cups gluten free oats

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 ½ teaspoons cinnamon

½ teaspoon ginger

½ teaspoon nutmeg

2 eggs

¼ cup honey

¼ cup canola oil

¼ cup plain 0% fat Greek yogurt

¼ cup applesauce

1 ½ cups peeled and diced apples


Preheat oven to 350 degrees, prepare muffin tin with non-stick cooking spray. Place gluten free oats into food processor and process for 2 minutes; add inn baking powder, baking soda, salt and spices and pulse to combine. In a separate bowl combine eggs, honey oil, yogurt and applesauce and whisk until blended. Add wet ingredients to dry and stir to combine. Fold in apples. Fill 12 muffin tins about 2/3 full. Bake for 18-20 minutes.
