Jan 27, 2021 Healthy Recipes: Greens n' Beans Saute

Make this flavorful, nutrient-packed dish for lunch or dinner or as a meal prep for the week.

Sauteed Greens


1  tsp olive oil

2 cloves garlic, sliced

¼ tsp smoked paprika

2 c fresh spinach, kale, or other greens

1 can (15oz)  cannellini beans, drained

¾ c low sodium vegetable broth

Black pepper to taste


  1. In a large sauté pan, heat olive oil. 
  2. Add garlic. Sauté until fragrant, but not brown. 
  3. Stir in beans and vegetable broth. Bring to a boil. 
  4. Add the greens, stir, and allow to begin to wilt. 
  5. Remove from heat when greens begin to soften. 
  6. Stir in paprika, add pepper to taste.
