Kale and black beans are fall’s nutritional dream team—immune boosting, mood lifting and perfect for cozy, comforting meals. They fuel your body and spirit as the days grow shorter.

Ingredients

  • 1 bunch of kale, stems removed and chopped
  • 3 tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp black pepper, freshly ground
  • 2 tbsp apple cider vinegar
  • 1 clove garlic, grated
  • 1 cup brown rice
  • 1 avocados, peeled and diced
  • 15 oz black beans, drained and rinsed
  • 1 cup fresh cilantro, coarsely chopped

Instructions

  1. Place the kale in a large bowl, drizzle with 1 tbsp of the oil, sprinkle with salt and pepper and massage with your hands to soften the kale.
  2. Whisk the remaining oil, vinegar and garlic in a bowl to combine.
  3. Divide the rice, avocado, beans, cilantro and kale among 4 bowls and drizzle with the dressing. Serve topped with toasted pumpkin or sunflower seeds.

Tips and Notes

Add pickled jalapenos or hot sauce for some heat.
