
Kale and black beans are fall’s nutritional dream team—immune boosting, mood lifting and perfect for cozy, comforting meals. They fuel your body and spirit as the days grow shorter.
Ingredients
- 1 bunch of kale, stems removed and chopped
- 3 tbsp olive oil
- ½ tsp kosher salt
- ¼ tsp black pepper, freshly ground
- 2 tbsp apple cider vinegar
- 1 clove garlic, grated
- 1 cup brown rice
- 1 avocados, peeled and diced
- 15 oz black beans, drained and rinsed
- 1 cup fresh cilantro, coarsely chopped
Instructions
- Place the kale in a large bowl, drizzle with 1 tbsp of the oil, sprinkle with salt and pepper and massage with your hands to soften the kale.
- Whisk the remaining oil, vinegar and garlic in a bowl to combine.
- Divide the rice, avocado, beans, cilantro and kale among 4 bowls and drizzle with the dressing. Serve topped with toasted pumpkin or sunflower seeds.
Tips and Notes
Add pickled jalapenos or hot sauce for some heat.
