Power up with this quinoa burrito bowl, perfect for lunch or dinner.


  • 1 cup uncooked quinoa – any kind
  • 1 15 oz can of corn
  • 1 15 oz can of black beans
  • 1 cup of jarred salsa (low sodium)
  • Cumin to taste
  • Black pepper to taste

Optional Ingredients

  • Hot sauce
  • Brown rice
  • Chickpeas
  • Cilantro
  • Spinach or any vegetables


  1. Cook quinoa in a large pot.
    Quick Tip: One cup of quinoa requires 2 cups of water and let boil for 8-10 minutes.
  2. Once quinoa is cooked allow to cool in a large bowl.
  3. Sauté corn and black beans with cumin and black pepper or any other desired spices and optional ingredients in a deep pan. Sauté for 2-4 minutes, until tender.
  4. Pour in cooked quinoa and salsa.
  5. Stir ingredients together and let simmer for 2-4 minutes.
  6. Let cool and enjoy!
