As a salad topper or a dip paired with fresh vegetables or whole grain crackers, this dressing is tasty and nutritious.
Ingredients
- 1 ripe avocado
- ½ cup plain nonfat Greek yogurt
- 1 garlic clove, minced
- ½ lemon, juiced
- ½ tsp black pepper
- 2 Tbsp chives, chopped
- 1-2 Tbsp water, to thin out
Directions
- Slice avocado lengthwise, remove pit and scoop flesh into food processor or blender.
- Add the remaining ingredients, except chives, to the food processor or blender.
- Blend until smooth and the mixture can drip off a spoon. Add water to thin dressing as needed.
- Add chives and pulse to evenly distribute throughout dressing.
- Serve over a salad or as a dip alongside some crunch vegetables or whole grain crackers.
