Veggie Fries

Whose mouth doesn't water at the thought of fries? For a healthier version you can eat guilt-free anytime, choose a favorite vegetable and get to slicing!


  • Your choice of: sweet potato, zucchini, carrots, turnips, or parsnips
  • 2 tbsp vegetable oil
  • 4 tsp grated parmesan
  • ¼ tsp black pepper

Other optional seasonings: garlic powder, chili powder, cayenne pepper, or cinnamon


  1. Preheat oven to 375° F.
  2. Spray large baking tray with cooking spray.
  3. Wash veggies and slice into fry shapes.
  4. Mix vegetables and remaining ingredients in a large bowl to coat all veggies.
  5. Spread evenly onto baking tray – do not overlap veggies.
  6. Bake for 20-25 minutes, or longer to get desired crispiness.
  7. Let cook for 5-10 minutes & enjoy!
    • Tip: Soak sweet potatoes in water overnight or a few hours before baking to help them cook quicker & make them softer.
