This salad offers up of the super food Kale with all its’ bounty of phytonutrients, vitamins, and flavor. The addition of crushed croutons added just before serving provide a delicious crunch which is offset with the sweetness of the strawberries making this salad a special treat that is easy enough to make every day!
Ingredients
- 4 cups kale cleaned and cut off stem and chopped
- 1 ½ cups strawberries sliced or ½ cup craisins
- fresh parmesan, 8 thinly sliced pieces
- ½ cup croutons, crushed
- 2 Tbsp extra virgin olive oil
- 2 Tbsp lemon juice
- 1 Tbsp balsamic vinegar
- 1 clove garlic minced
- ½ tsp Dijon Mustard
- ½ tsp salt
- ¼ tsp pepper
Directions
- Make the dressing combining olive oil, lemon juice, balsamic, Dijon mustard, garlic, salt and pepper. Mix well with fork or small whisk
- Place cleaned and chopped kale into a large bowl. Drizzle with a small amount of dressing and message with your hands until the kale is smooth and tender. (This step makes all the difference!)
- Add strawberries and remaining dressing and lightly toss.
- Place croutons in a bag or on wax paper and with a rolling pin or a heavy round bottle, roll over the croutons to crush.
- Sprinkle croutons over dressed salad, then place parmesan slices on top.
