Parmesan Zucchini Sauté

Try this quick and easy sauté for a summer side for any occasion.


2 Tbsp. Olive Oil
1 onion sliced in thin rounds
4 medium zucchinis cut in ½ inch rounds
½ tsp salt
¼ tsp pepper
1 Tbsp fresh rosemary or 1 tsp dry rosemary
2 Tbsp fresh parsley or 1 tsp dry parsley
¼ cup finely grated parmesan cheese or nutritional yeast


Heat large skillet (cast iron works great!), add onions and cook on medium/low until soft and they start to turn slightly brown. Add everything else and gently stir to mix. Stir occasionally. Allow some browning to happen at the bottom, and zucchini should be soft, but not mushy.  

Top with parmesan cheese or nutritional yeast and serve right away!

Note:  If you are grilling, you could make this dish on a cast iron sauté pan on the grill, or a grill sauté pan. Be careful with handling the pan!
