With everything on our to-do lists in the morning, it can be hard to fit in a nourishing breakfast. Prep these overnight oats the night before so you have something to grab and go with in the morning.

Ingredients

½ cup regular old-fashioned rolled oats

½ cup unsweetened almond milk

1 teaspoon vanilla

½ cup blueberries

⅓ cup sliced bananas

Directions

Put the oatmeal, vanilla and almond milk in a to-go container such as a mason jar or plastic storage bowl and stir. Layer in the sliced bananas and blueberries. Cover and refrigerate at least 4 hours or overnight to allow the oats to soak up the liquid.

You can eat the oats cold as a quick, healthy breakfast on the run or heat them up in the microwave for 30-45 seconds. Be creative and try different fruit and spice combinations such as apples and cinnamon, yogurt and flax seeds, mango and banana or whatever suits you.
