pineapple chicken burgerOur Pineapple Chicken Burger recipe is the perfect combo of sweet and savory! We swap traditional ground beef for lean ground chicken breast to reduce the saturated fat content of a traditional burger. Grilled pineapple adds tons of flavor without adding salt and fat. Grill up a batch this weekend for the whole family!

Ingredients:

1 pound 93% lean ground chicken
¾ cup panko breadcrumbs
½ cup skim milk
¼ Vidalia onion, grated
¼ teaspoon cayenne pepper
1/8 teaspoon salt
1/8 teaspoon black pepper
6 sliced pineapple rings, canned in juice or water
6 lettuce leaves
6 whole wheat burger buns

Directions:

  1. Combine chicken, breadcrumbs, milk, grated onion, cayenne, salt and pepper in a large mixing bowl, careful not to overmix. Divide mixture into 6 patties and place on a plate or baking sheet. Refrigerate for 1 hour to firm up patties.
  2. Heat an outdoor grill or grill pan over medium heart. Spray with grill spray and add patties. Grill for 5-6 minutes per side until no longer pink in the center.
  3. Grill pineapple for 2-3 minutes per side until grill marks appear
  4. Assemble burgers: layer burgers, pineapple, and lettuce leaves on burger buns. Serve alongside a green salad and enjoy!
