Aug 13, 2025 Whole Grain Pasta with Chicken Sausage and Eggplant Recipe

Looking for a wholesome dinner that’s hearty, flavorful, and good for you? This whole grain pasta with chicken sausage and grilled eggplant recipe shared from Jennifer Meyers, MS, RDN, CDCES, BC-ADM, a registered dietitian and certified diabetes care and education specialist with the Center for Diabetes Wellness and Prevention, delivers just that, with a balance of lean protein, fiber-rich pasta, and nutrient-packed seasonal veggies!

Ingredients
1 Box of Whole Grain Pasta (any shape)
1 Whole Eggplant (grilled)
1 Package of Organic Chicken Sausage (sliced)
2 Tablespoons Minced Garlic
¼ Cup Olive Oil
½ Large White Sweet Onion
Salt and Pepper to taste

*You can add other seasonal veggies like cherry tomatoes and fresh spinach to the skillet.

Serves a Family of 4

Steps
1. Slice eggplant into ¼ inch thickness and place in single slices on the grill. Baste with olive oil and sprinkle salt and pepper on both sides. Grill both sides for 2 to 3 minutes until translucent and soft. Allow to cool and cut into cubes.

2. Cook pasta according to box directions.

3. In a separate skillet add chopped onion, garlic, and sauté with olive oil until the onion is translucent.

4. Add sliced chicken sausage links and cook according to the package directions.

5. Add grilled eggplant.

6. Drain pasta and add to skillet, tossing mixture together.

7. You can add pasta water and extra olive oil, salt and pepper to taste.

8. Plate dish and sprinkle with fresh basil and grated parmesan cheese.
