Fall into Healthy Breakfasts to stay focused all morning with these Breakfast Cookies!
Ingredients
- 2 cups rolled oats
- 2 ripe mashed bananas
- 1/2 cup unsweetened applesauce
- 1/2 cup sunflower seed butter
- 2 tsp cinnamon
- 2 tsp vanilla extract
- 1.5 tsp baking powder
- pinch of salt
Add-in of choice:
- ¼ cup unsweetened coconut flakes
- ¼ cup unsweetened dried cranberries
- ¼ cup dark chocolate chips
- ¼ cup chia seeds
- ¼ cup pumpkin seeds
Directions
- Preheat oven to 350F.
- In a large bowl, mash bananas. Add in unsweetened applesauce, sunflower seed butter, and vanilla extract. Whisk to thoroughly combine.
- Add oats, cinnamon, baking powder, salt and add-in of choice to wet mixture and stir to combine with large spoon or spatula.
- Cover a large baking sheet with parchment paper or spray with nonstick cooking spray. Use a cookie scoop or ¼ measuring cup, measure out cookies.
- Bake for 15-20 minutes, or until lightly golden brown. Let cool for 5-10 minutes before eating. Store in an airtight container for up to 5 days in the fridge.
- Enjoy alone or with some low-fat Greek or plain yogurt.
