Ingredients

  • 2 cups rolled oats
  • 2 ripe mashed bananas
  • 1/2 cup unsweetened applesauce
  • 1/2 cup sunflower seed butter
  • 2 tsp cinnamon
  • 2 tsp vanilla extract
  • 1.5 tsp baking powder
  • pinch of salt

Add-in of choice:

  • ¼ cup unsweetened coconut flakes
  • ¼ cup unsweetened dried cranberries
  • ¼ cup dark chocolate chips
  • ¼ cup chia seeds
  • ¼ cup pumpkin seeds

Directions

  1. Preheat oven to 350F.
  2. In a large bowl, mash bananas. Add in unsweetened applesauce, sunflower seed butter, and vanilla extract. Whisk to thoroughly combine.
  3. Add oats, cinnamon, baking powder, salt and add-in of choice to wet mixture and stir to combine with large spoon or spatula.
  4. Cover a large baking sheet with parchment paper or spray with nonstick cooking spray. Use a cookie scoop or ¼ measuring cup, measure out cookies.
  5. Bake for 15-20 minutes, or until lightly golden brown. Let cool for 5-10 minutes before eating. Store in an airtight container for up to 5 days in the fridge.
  6. Enjoy alone or with some low-fat Greek or plain yogurt.
