
Ingredients
1 15 oz can of chickpeas2 tbsp of lemon or lime juice
1 ripe avocado
1 pinch of pepper and oregano
Optional ingredients: quinoa or couscous, Greek yogurt, macaroni pasta, celery
Directions
- Prepare your chickpeas by rinsing and draining them.
- Prepare your lemon or lime by cleaning it and cutting it in half.
- Prepare 1 ripe avocado by cleaning it and cutting it in half.
- Toss chickpeas into a large mixing bowl and mash chickpeas.
- Add in 2 Tbsp of lemon or lime by squeezing the fruit.
- Add a whole avocado.
- Add spices to taste.
- Mix in all ingredients.
