Chickpea Avocado Salad

chickpea and avocadoAs the warmer weather approaches, this makes for the perfect side at any barbecue!


1 15 oz can of chickpeas
2 tbsp of lemon or lime juice
1 ripe avocado
1 pinch of pepper and oregano

Optional ingredients: quinoa or couscous, Greek yogurt, macaroni pasta, celery


  1. Prepare your chickpeas by rinsing and draining them.
  2. Prepare your lemon or lime by cleaning it and cutting it in half.
  3. Prepare 1 ripe avocado by cleaning it and cutting it in half.
  4. Toss chickpeas into a large mixing bowl and mash chickpeas.
  5. Add in 2 Tbsp of lemon or lime by squeezing the fruit.
  6. Add a whole avocado.
  7. Add spices to taste.
  8. Mix in all ingredients.
Optional - throw all ingredients into a food processor.
