Chia Seed Pudding Recipe

This amazing, sweet treat is naturally gluten-free and a great way to boost your fiber and Omega 3 fatty acids.

Ingredients 

  • ½ cup fresh raspberries 
  • 1 cup and 2 tablespoons coconut milk (In the carton not the can)
  • ¼ cup chia seeds
  • 1 tablespoon maple syrup
  • 1 tablespoon fresh lemon juice
  • A pinch of salt
  • ½ teaspoon vanilla extract

Instructions: 

  1. Mix all ingredients together and whisk until blended. Put in the refrigerator for 5 to 10 minutes and restir to prevent clumping. Refrigerate for 6 to 12 hours, the longer it sits the thicker it may become.
  2. Portion into 4 small containers and top with raspberries and your favorite nut or seed. You can be creative with different flavor combinations.
