
Ingredients
Dry Ingredients:
¾ cup dry rolled oats
¾ cup rice cereal crisps (any brand)
Wet Ingredients:
9 pitted dates – roughly chopped into small pieces
¼ cup sun butter OR any seed/nut butter of choice
¼ cup honey
1 tsp vanilla extract
Optional Add-ins:
¼ cup unsweetened dried cranberries, roughly chopped
¼ cup mini dark chocolate chips
¼ cup unsweetened dried coconut flakes
Directions
- In a food processor with a metal blade, add chopped dates, honey, sun butter, oats, vanilla extract, and dried chopped cranberries (or add-in of choice).
- Pulse mixture until roughly chopped and combined.
- Place oat mixture in a medium sized mixing bowl. Add rice cereal crisps and any optional add-ins to the bowl and stir together. Place mixture in the fridge to chill for a minimum of 20 minutes.
- Once chilled, use a spoon to scoop out a small portion of the mixture and use your hands (washed before) to shape into a 1-inch ball. Repeat with remaining mixture.
- Enjoy! Keep energy bites stored in an airtight container in the refrigerator for up to 1 week.
