In honor of St. Patrick's Day, Michelle Pasia, MPH, RDH, from The Kogan Celiac Center located at Barnabas Health Ambulatory Care Center shares her recipe for Gluten-Free Irish Soda Bread.
3 cups gluten free 1 to 1 baking flour
1/3 cup sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons butter
1/2 cup raisins
1 cup buttermilk
1 egg
Preheat oven to 375 degrees, line a baking sheet with parchment paper. Combine flour, sugar, baking soda, baking powder and salt. Cut in cold butter into flour mixture by cutting butter into small pieces and using a pastry cutter or your hands to combine butter and flour. Add raisins to mixture, then add in buttermilk and egg, combine until dough forms, if dough is dry add a little more buttermilk. Form dough into a round ball and place on prepared baking sheet. Cut an X on the top of the loaf. Bake in center of oven for 35-45 minutes and store bread in the refrigerator.
