Recipe: Gluten-Free Pancake

2 cups of gluten free flour cup for cup

2 teaspoons baking powder

2 tablespoons ground flax

¼ teaspoon salt

1 tablespoon sugar

1 teaspoon vanilla

2 eggs

1 ¾ cup milk

Mix flour, baking powder, salt and sugar together and set aside. Mix remaining ingredients, add dry ingredients to wet ingredients and stir to combine. Prepare a nonstick skillet and ladle ¼ cup batter onto skillet, flip pancakes after bubbles start to surface. Cook until lightly browned.

Makes 6-8 pancakes
