Jul 29, 2019 Recipe: Quick Egg Cups

You can freeze these, grab them in them in the morning and pop them in the microwave for a quick breakfast.

1 cup sliced zucchini

¼ cup diced onion

¼ teaspoon salt

¼ teaspoon pepper

8 eggs

Preheat oven to 375 degrees. Prepare muffin tin with cooking spray. Sauté’ zucchini and onion for about 5 minutes. Let cool. Whisk 8 eggs, add salt, pepper and vegetable mixture, stir to combine. Pour into 9 muffin tins filling 3/4 .

Makes 9 egg cups

Bake for 18-20 minutes, until set.
