¼ cup gluten free oats
1 ripe banana
1 egg
Place all ingredients in a blender or food processor and blend until smooth about 2 minutes.
Heat a non-stick skillet and spray with cooking spray, place in ¼ cup servings in skillet to make small pancakes. Cook for 4-5 minutes on each side.
Note: large pancakes may fall apart, try for smaller size pancakes. Recipe makes 4-5 small pancakes.
