Jun 13, 2019 Recipe: Crunchy Quinoa Peanut Granola Bar

6 California dates, pitted and chopped

1 cup old fashioned rolled oats, certified gluten free

¾ cup uncooked quinoa, prewashed

½ cup peanuts, salted and chopped

½ cup peanut butter

¼ cup honey

¼ teaspoon salt

¼ cup pumpkin seeds

¼ cup chocolate chips.

Preheat oven to 400 degrees, prepare an 8 X 8 pan with parchment paper. Fit food processor with standard S shaped blade. Place all ingredients into a mixing bowl and stir until well combined. Place in pan and bake for 20-22 minutes. Cool completely, place in refrigerator for 30 minutes before cutting.
