Recipe: Gluten Free Sugar Cookies

½ cup unsalted butter, softened

¾ cup sugar

1 large egg

½ teaspoon vanilla

1 ½ cups gluten free flour cup for cup

½ teaspoon baking soda

¼ teaspoon salt

½ cup sprinkles (gluten free)

Preheat oven to 400 degrees and prepare baking sheet with parchment paper. Cream butter and sugar on medium speed until smooth, add in egg and blend until well combined. In a medium bowl prepare dry ingredients. Slowly add dry ingredients to wet ingredients and mix well, scraping down sides of the bowl as necessary. Form into 2 inch balls and roll into sprinkles, place onto cookie sheet 2 inches apart. Bake 6-9 minutes or until golden brown. Remove from oven and place on wire rack to cool.
