Jul 29, 2019 Recipe: Black Bean Brownies

1 can black beans drained

¼ cup canola oil

2 large eggs

1 teaspoon vanilla extract

¾ cup cocoa powder

¼ teaspoon baking powder

¼ teaspoon kosher salt

¾ cup brown sugar

½ cup gluten free chocolate chips

Preheat oven to 350 degrees and prepare an 8X8 pan with parchment paper. Place beans and oil into food processor and process until smooth about 2 minutes. Mix in eggs until well blended. In a separate bowl combine dry ingredients then slowly add to bean mixture until well combined. Pour into prepared pan and bake for 25-28 minutes or until firm. Let cool completely before cutting.
